Fruit Salsa & Cinnamon Chips

Ingredients: 

2 kiwis, peeled and diced

2 Golden Delicious apples, peeled cored and diced

8 ounces raspberries

8 ounces blackberries

1 pound strawberries

2 tablespoon white sugar

1 tablespoon brown sugar

3 tablespoon fruit preserves, any flavor (my favorite is strawberry) 

10(10 inch) flour tortillas

Butter flavored cooking spray

2 cups of cinnamon sugar 

Directions: 

In a large bowl, mix kiwi, apples, berries, sugars and fruit preserves.  Cover and Chill in refrigerator at least 15 minutes.  (Depending on ripeness of fruit you might have to add more or less sugar and preserves.) 

Preheat oven to 350 degrees. 

Cut tortillas into wedges and arrange in a single layer on a large baking sheet.  Spay one side of wedges with cooking spray.  Generously sprinkle wedges with cinnamon sugar. Light spay again with cooking spray. 

Bake in preheated oven for 8-10 minutes or until golden brown.  Repeat with any remaining wedges.  Allow to cool approximately 15 minutes.  Serve with chilled fruit salsa.  (Fruit salsa is best when served immediately after 15 minutes of chilling.  Fruit will break down and not look as appetizing.
