Bistro Kids Mayo

Ingredients                                       Amount

Eggs yolks                                            2

White wine vinegar                            1 oz

Water                                                 ½ oz

Dry mustard                                        1 t

Canola oil or evoo                               2 C

Salt                                                      ½ t

Pepper                                                 ¼ t

Lemon juice                                         2 t 

Method :

Combine yolks, vinegar, water, and mustard in small bowl. Mix together well with whisk until the mixture is slightly foamy.

Gradually add the oil in a thin stream, constantly whipping until thick and incorporated.

Adjust flavor to taste with salt and pepper and lemon juice.

Refrigerate immediately.

Can also be make in robo coupe or blender. 

Yield: 1 Pint
