Directions: Preheat oven to 375°F. Add oil & preheat a large sauté pan on medium-high for 3 minutes. Place ground bison, green peppers, onions, salt & pepper into saute pan and cook for 8-10 minutes, stirring frequently, until bison is brown, breaking meat up as it cooks.
Stir into the bison mixture Chef Mark Alan Santa Fe Sauce, corn, peas and mushrooms; bring to a simmer. Add the mixture to a baking dish. Spread mashed potatoes evenly over the mixture and top with shredded cheese. Bake for 10 minutes, or until cheese is melted. Remove from oven and allow to stand 5 minutes before serving.
